I've got an eye health tip for you today. A study from Tufts University reported that consuming pistachios daily can improve eye health since it increases macular pigment optical density (MPOD). MPOD helps protect against eye damage caused by blue light and aging. The study found that participants who ate pistachios daily saw a significant increase in MPOD after only six weeks, with the effect continuing throughout the 12-week study. This benefit from pistachios is attributed to lutein, a plant pigment vital in eye health and potentially helpful in preventing age-related macular degeneration (AMD). Lutein is found in many vegetables such as spinach, corn and bell peppers, as well as flowers such as nasturtiums and marigolds, but pistachios are the only nut that provides a measurable amount of it.
