I love the science of veganism – it makes so much sense. I have a handy tip on the benefits of freezing bread. Research reveals that freezing and then defrosting bread considerably decreases the blood sugar response in comparison to eating fresh bread. Toasting bread also results in a lower blood sugar response and combining these techniques– freezing, defrosting, and then toasting –leads to the most significant reduction, which is especially helpful for diabetics. Freezing bread alters the structure of its starch, which consists of more than 80% of wheat flour content. This change creates resistant starch, a form that the small intestine cannot completely digest. Gut bacteria in the colon then need to break it down and this process releases beneficial compounds like butyrate, which promotes a healthy intestinal environment. Some studies have correlated butyrate with anti-inflammatory effects that may relieve digestive issues. This freezing and defrosting technique not only offers health benefits, but it also prevents your bread from becoming stale quickly and therefore reduces waste.
